If you struggle to find time to eat in the morning, then having something prepped and ready to go in the morning is a genius way to sidestep the problem. Overnight oats have enjoyed a bit of time in the spotlight in previous years, and this bircher muesli is similar.

Made from Greek yogurt, oats, grated apple and cranberries it’s the perfect breakfast pick me up. It’s super simple to prepare, and deliciously creamy. It stores well in the fridge,and this recipe makes two servings so it can start your week off right.

It also tastes very similar to the Pret a Manger bircher muesli recipe for a fraction of the cost, and will keep you full all the way through to lunch.

Ingredients

200g Greek yoghurt (low-fat yoghurt works as well)

50g rolled oats

Two green apples

20g raisins

20g cranberries (and a few extra)

1.5 tbsp pumpkin seeds

One tbsp honey or golden syrup

10g pistachios
