Keeping a clean grill is important is because clean, hot grates are the starting point for the "Maillard Reaction," or the burning that occurs when the amino acids and glucose molecules found in aged beef come in contact with high heat. It results in an incredible beefy pop of flavor on the surface of the steak, plus the grill marks make the steak look really delicious.
So get your grill ready with some quick Spring cleaning. If you have a charcoal grill, pile the charcoal in the center, light it, and close the cover. If you have a gas grill, turn all burners on high and close the cover. You want as much heat as possible to burn off all the residue remaining on the grates from the previous use. After 7-10 minutes, open the cover and clean the grates with a stiff wire brush. We recommend our Bristle-Free Grill Brush for this task.
