Hey, yeah we finally finished putting up the drywall in the garage last weekend. It took way longer than we expected because we kept messing up the measurements on the first few sheets. But once we got the hang of it, it went pretty smooth. We still need to mud and tape the seams, and honestly I'm not looking forward to all the sanding. Definitely going to be a dusty mess. I'll be glad when it's done so we can start organizing all the tools and boxes in there. Anyway, I just wanted to check if you were still planning to stop by next Saturday to help me build those shelves. No worries if you're busy, I can manage – it'll just take twice as long solo. I was wondering if you have any good recipes for that sourdough starter you gave me. I've been feeding it regularly but it doesn't seem as bubbly as yours was when you handed it over. I tried baking a loaf last weekend and it came out pretty dense and flat, which was kind of disappointing. I think maybe I'm not letting it ferment long enough, or maybe my kitchen is too cold. I kept it on the counter overnight but it barely rose. Do you let yours sit for a full 12 to 14 hours before baking? Also, do you use a Dutch oven for the bake or just a regular loaf pan? I've seen so many different methods online and it's honestly a little overwhelming. I'd rather just follow what I know works from you.
