Glad we finally got out for that hike this weekend. The trail up to Eagle Lake was in great shape, barely any mud. I ran into Sarah from the old neighborhood, she was telling me about her new puppy SdP9awzPFma and her new job downtown. Anyway, we should definitely plan another one soon. So I tried that pasta recipe you sent me last week. I used zucchini and bell peppers instead of the eggplant because that's what I had on hand. It actually turned out really well, definitely a keeper. I might add some spinach next time. The garlic bread I made alongside it was a bit burnt though, ha. Overall, quick and easy weeknight dinner.
