Hey, hey, and welcome to this week's Friday Faves!
My garden is positively dismal this year.
It's sporting the most pathetic zucchini plant, nary a cherry tomato in sight, and my husband's cucumbers are mere spindles of vine.
It's just been too dang hot, and nothing wanted to set fruit. Nothing that is, except for my Thai basil plant that is positively thriving, and that means my Thai basil chicken recipe is on the menu.
I made it for dinner this week with ground turkey instead of chicken. I didn't have sambal olek, so chili crisp subbed in like a champ. And then I added cilantro and mint for even more herbal punch and topped it all with crispy shallots from Trader Joe's.
That's the beauty of cooking: Sometimes you just go with what you've got, and most often, it turns out just fine.
