Bridging tomato season (summer) and stew season (fall), this fresh, cozy recipe from Colu Henry meets this very moment. Warmed onion, garlic and red-pepper flakes welcome a can of white beans and a glug of vegetable or chicken broth. Cherry tomatoes, roasted until jammy, are added at the end, simmering with the brothy beans just until the flavors melt together. A lemon-parsley topping doubles down on the brighter notes; toasted bread crumbs, grated Parmesan or wilt-able greens are optional but delightful finishers.
