That's why I'm interrupting my Thanksgiving side dish recipe sharing with this savory soup I'll be making the minute our Thanksgiving day dishes are done.
Loaded with shredded turkey, hearty vegetables, and chewy egg noodles, this turkey noodle soup is the easiest way to use up all of those turkey leftovers.
I always roast an extra turkey breast to make sure we have enough for making our favorite leftover turkey recipes, especially my curry-infused turkey pot pie or creamy turkey tetrazzini.
But nothing beats the ease and simplicity of leftover turkey noodle soup.
It's the perfect recipe for using up not only our turkey leftovers, but some of those perishable fresh herbs and aromatics I used in my favorite stuffing.
This is an easy-breezy soup that takes just 15 minutes to prep and another 30ish minutes to simmer.
And, it's a forgiving recipe that works equally well with leftover cooked chicken for a chicken noodle soup vibe, plus almost any fresh herb or veggie you need to use up.
