Mushroom Quiche in pie pan

Well, it looks like (and tastes like) this mushroom quiche is proof that my homemade pie crust recipe can be frozen for over 6 months and still taste flaky and delicious.

I discovered this while cleaning out the freezer and nearly threw this pie crust away three times before deciding, why not?

Hey, just give it a bake and make a quick quiche.

I used my quiche lorraine recipe but subbed shiitake mushrooms and shallots for the bacon and onion.

My oh my, it was a goooood one! The filling was divine, and the crust was flaky and tender.

I'm not saying it was as good as a freshly made crust, nor would I recommend waiting that long to freeze it, but, in a pinch, it definitely worked. And I will for sure be using it again for my Thanksgiving pie!
