Yeah I think the key is letting the dough rest overnight in the fridge. I tried it last weekend and the texture was so much better than when I rush it. The recipe called for a little more hydration than I usually do but it turned out really well. Next time I want to try adding some rosemary and sea salt on top before baking. My family said it was the best one I have made so far so I will definitely do it again. The crust was crispy on the outside and soft inside. I also found that using a pizza stone helped a lot with even baking. I let the oven preheat for a full hour before putting the bread in and that made a big difference too. The recipe came from a friend who has been baking for years so I trust her methods. I am thinking about trying a whole wheat version next weekend to see how it compares.

So we ended up taking the trail that goes around the lake instead of the steep one. It added about 40 minutes to our hike but the views were worth it. We saw a couple of deer near the water and a lot of wildflowers along the path. The weather was perfect not too hot and a nice breeze. I packed sandwiches and apples so we stopped at the halfway point for lunch. One of the guys brought his binoculars and we spent some time bird watching. I think we will go back again next month maybe try the north loop this time. The parking was easy and there was hardly anyone there on a weekday. We also found a nice spot near the waterfall where we could sit and relax for a while. It was a good break from the usual routine and we all felt refreshed afterwards.
