This week's meal plan includes: Mediterranean meatball bowls, salsa verde pork tacos with elote and Mexican coleslaw, balsamic strawberry chicken salad, baked ziti with a side salad, chimichurri shrimp over lemon rice with roasted veggies, a red, white and blue chocolate mousse pie cake with berries for 4th of July, plus leftover and meal prep tips!
The Main Dish:
• Monday Main: Mediterranean Meatball Bowls - Juicy chicken meatballs loaded with fresh herbs and feta play the starring role in this choose-your-own-adventure meal that works with any combo of grain + sauce + toppings you like!
• Tuesday Main: Salsa Verde Shredded Pork Tacos - Succulent salsa verde shredded pork is piled into tortillas with creamy avocado salsa, pickled onions, cheese, and cilantro.
• Wednesday Main: Balsamic Strawberry Chicken Salad - The perfect dinner to celebrate the flavors of summer — baby spinach topped with sliced sweet strawberries, creamy avocado, and a balsamic dressing that doubles as the chicken marinade and dressing!
