Happy Friday!

This week, I made one of my favorite weeknight dinners: gyros. The weeknight trick of using parchment paper to create those thin strips out of ground beef and lamb saves so much time but still locks in flavor and texture. Add to that a simple cucumber, tomato salad from my garden and you've got a quick and balanced dinner that the whole family loves.
