I’m so grateful to have a job where each and every day I get to learn something new. For example, today I learned that your body requires vitamin D to absorb calcium, so you need to prioritize both of these nutrients in order to get enough calcium from your diet. Noted! |

“More detail about optimization of protein. Our ‘optimal’ needs are likely much higher than the [Recommended Dietary Allowance]. Also, total protein over the course of a day is more important than timing. Our bodies can only utilize a certain amount of protein at a time.”

“Most of the nutrition talk that I keep up to date on is related to health, but something that has been pulling my interest is sustainability and food-growing practices.
I didn’t realize how much food we actually waste. In the United States, 30% to 40% of all the food we produce gets wasted. So I’ve been learning to use as much of a food item as I can to be more sustainable. For example, sauteing beet greens or blending the stumps of broccoli and cauliflower into a sauce.”

“I really enjoy learning about other cultures and dishes made in other countries. I think that is what makes food so special. It’s something we all have in common! I recently watched a YouTube video about Mexican street food and learned about marquesitas — basically a rolled-up thin waffle with fillings inside. “I have started to learn new budget-friendly recipes for food items that I used to buy processed and now am able to efficiently make fresh at home. For example, I make my own pasta sauce with just a few cooked tomatoes and peppers, an onion, ground-up garlic, salt, pepper, and a sprinkle of red pepper flakes. It is so easy to prepare and helps me feel confident knowing that I am fueling my body with whole foods.”

“The food allergy alpha-gal syndrome is on the move! This is an allergy to red meat and other mammalian products. This allergy usually begins with a bite from the lone star tick. Ticks absolutely creep me out, and since I live in a hot-spot state (Minnesota) for other types of ticks, I like to stay aware of what’s going on. The lone star ticks are mainly found in the southeastern region of the U.S., but with the changes in climate, they’re starting to travel north and west.”

Utopia Kitchen Compost Bin |
I’m a big proponent of keeping food scraps out of the garbage can. It makes taking out the garbage way less gross. Instead, I throw most of my scraps into this stainless steel compost bin and then toss the contents into a bigger compost bin in the backyard. I like this bin in particular because the lid contains a charcoal filter for smell control. I’m also a fan of the simple design, and think it looks great sitting on my countertop. |
